How To Make Roast Squash & Hummus Winter Salad

Ingredients
- 1 medium butternut squash, peeled and diced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 cup sliced red onion
- 1/2 cup pomegranate seeds
- 1/4 cup chopped fresh parsley
- 1/4 cup roasted pumpkin seeds
- 1/2 cup hummus
- Juice of 1 lemon
- 2 tablespoons balsamic vinegar
Instructions

Preheat the oven to 400°F (200°C).

Place the diced butternut squash on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat evenly.

Roast the squash in the preheated oven for 25-30 minutes, or until tender and slightly caramelized.

In a large salad bowl, combine the mixed greens, cherry tomatoes, red onion, pomegranate seeds, parsley, and roasted pumpkin seeds.

In a small bowl, whisk together the hummus, lemon juice, and balsamic vinegar to make the dressing.

Pour the dressing over the salad ingredients and toss to coat evenly.

Add the roasted squash to the salad and gently toss to combine.
