How To Make Vegan Roast Spiced Squash Salad with Tahini Dressing

Ingredients
- 1 small butternut squash, peeled and diced
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp cinnamon
- Salt and pepper to taste
- 4 cups mixed salad greens
- 1/4 cup chopped fresh cilantro
- 1/4 cup sliced red onion
- 1/4 cup dried cranberries
- 1/4 cup chopped walnuts
- for the tahini dressing:
- 1/4 cup tahini
- 2 tbsp lemon juice
- 2 tbsp water
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions

Preheat the oven to 400°F (200°C).

In a large bowl, toss the diced squash with olive oil, cumin, paprika, cinnamon, salt, and pepper.

Spread the squash in a single layer on a baking sheet and roast for 25-30 minutes, or until tender and lightly browned.

In the meantime, prepare the tahini dressing by whisking together tahini, lemon juice, water, garlic, salt, and pepper in a small bowl. Set aside.

In a large salad bowl, combine the mixed greens, cilantro, red onion, dried cranberries, and chopped walnuts.

Once the roasted squash is ready, add it to the salad bowl and toss everything together gently.

Drizzle the tahini dressing over the salad and toss again to evenly coat.
