How To Make Winter Squash Salad

A refreshing salad made with roasted winter squash, mixed greens, and a delicious honey vinaigrette dressing.

  • 1 small winter squash (acorn, butternut, or kabocha), peeled and diced
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 4 cups mixed salad greens
  • 1/2 cup dried cranberries
  • 1/4 cup roasted pumpkin seeds
  • 1/4 cup crumbled goat cheese
  • 1/4 cup honey
  • 2 tbsp apple cider vinegar
  • 1/4 cup olive oil


  1. Preheat oven to 400°F (200°C).

  2. Toss diced squash with 1 tbsp of olive oil and season with salt and pepper. Roast in oven for 30 minutes.

  3. In a small bowl, whisk together honey, apple cider vinegar, and 1/4 cup of olive oil.

  4. Assemble salad by layering mixed greens, roasted squash, dried cranberries, pumpkin seeds, and goat cheese. Drizzle with honey vinaigrette and toss to combine.
