How To Make Honeyed Beetroot & Carrot Salad with Feta & Hazelnuts

Ingredients
- 2 medium beetroots, peeled and grated
- 2 medium carrots, peeled and grated
- 100g feta cheese, crumbled
- 50g hazelnuts, roasted and roughly chopped
- 2 tablespoons honey
- 2 tablespoons apple cider vinegar
- 2 tablespoons extra virgin olive oil
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

In a large bowl, combine the grated beetroot and carrots.

In a small bowl, whisk together the honey, apple cider vinegar, olive oil, salt, and pepper.

Pour the dressing over the beetroot and carrots, and toss well to combine.

Let the salad marinate for at least 10 minutes to allow the flavors to meld together.

Just before serving, sprinkle the crumbled feta cheese and chopped hazelnuts over the salad.

Garnish with fresh parsley.
