Ingredients
- 4 medium beetroots, cooked and sliced
- 2 oranges, peeled and segmented
- 1/2 cup roasted hazelnuts, roughly chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons extra virgin olive oil
- 1 tablespoon honey
- Juice of 1 lemon
- Salt and pepper to taste
Instructions

In a large mixing bowl, combine the sliced beetroot, orange segments, chopped hazelnuts, and parsley.

In a small bowl, whisk together the olive oil, honey, lemon juice, salt, and pepper until well combined.
