  • 4 medium beetroots, cooked and sliced
  • 2 oranges, peeled and segmented
  • 1/2 cup roasted hazelnuts, roughly chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • Juice of 1 lemon
  • Salt and pepper to taste


  1. In a large mixing bowl, combine the sliced beetroot, orange segments, chopped hazelnuts, and parsley.

  2. In a small bowl, whisk together the olive oil, honey, lemon juice, salt, and pepper until well combined.

  3. Pour the dressing over the salad and toss gently to coat.

  4. Serve immediately and enjoy!
