  • 4 cups mixed salad greens
  • 1 cup crumbled feta cheese
  • 2 ripe nectarines, sliced
  • 1/4 cup fresh basil leaves, torn
  • 1/4 cup fresh mint leaves, torn
  • For the Lemon Poppy Seed Dressing:
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 teaspoon poppy seeds
  • Salt and pepper to taste

Instructions

  1. In a large salad bowl, combine the mixed salad greens, crumbled feta cheese, sliced nectarines, torn basil leaves, and torn mint leaves.

  2. In a small bowl, whisk together olive oil, lemon juice, honey, poppy seeds, and season with salt and pepper.

  3. Pour the dressing over the salad and toss gently to coat all the ingredients.
