How To Make Spinach Salad with Poppy Seed Dressing

If you want a salad that has a rich earthy flavor, this spinach salad is for you. The slight bitterness of the spinach goes well with poppy seed dressing.

Ingredients

For Dressing

  • ¼cupolive oil
  • ¼cupcanola oil
  • 2tsporange zest
  • ¼cupfresh orange juice
  • 2tbspfresh lemon juice
  • 2tbsphoney
  • 2tspdijon mustard
  • ¼tspsalt
  • 1tbsppoppy seeds

For Salad

  • 1lbchickengrilled
  • 9ozbaby spinach
  • 2mediumavocadoscored and diced
  • 1cupfetacrumbled
  • ¾cupalmondssliced , toasted
  • ¾cupcranberriesdried

Instructions

  1. Add olive oil, canola oil, orange zest, orange juice, lemon juice, honey, dijon mustard, and salt to a blender.

  2. Pulse until well emulsified. Pour into a jar and stir in poppy seeds. Refrigerate until ready to use.

  3. Add all salad ingredients to a large bowl. Pour dressing over top and toss to evenly coat. Serve immediately.
