How To Make Autumn Spinach Salad with Orange Poppy Seed Dressing

We are putting together a rich and fruity salad recipe with mandarin oranges, apples, pecans, pears, and topped with a delicious mix of poppy seed dressing.

  • 9ozbaby spinach
  • 3smallmandarin orangepeeled and segmented
  • 2smallred gala applescored and diced
  • 2bartlette pearscored and diced
  • 1cuppecanstoasted and roughly chopped
  • 3/4cupfeta cheesecrumbled

Orange Poppy Seed Dressing

  • 1/4cupolive oil
  • 1/4cupcanolaor vegetable oil
  • 2tsporange zest
  • 1/4cupfresh orange juice
  • 2tbspFresh Lemon Juice
  • 2tbsphoney
  • 2tspdijon mustard
  • 1tbsppoppy seeds
  • 1/4tspsalt


For the dressing:

  1. Add all of the dressing ingredients to a jar, cover with lid and shake to emulsify.

  2. Chill for 30 minutes if possible. Shake again just before pouring over salad.

For the salad:

  1. Layer spinach, apples, mandarin oranges, pears, pecans and feta into a large salad bowl.

  2. Drizzle with dressing and toss to evenly coat. Serve immediately.
