
How To Make Autumn Spinach Salad with Orange Poppy Seed Dressing
We are putting together a rich and fruity salad recipe with mandarin oranges, apples, pecans, pears, and topped with a delicious mix of poppy seed dressing.
Serves:
Ingredients
- 9ozbaby spinach
- 3smallmandarin orangepeeled and segmented
- 2smallred gala applescored and diced
- 2bartlette pearscored and diced
- 1cuppecanstoasted and roughly chopped
- 3/4cupfeta cheesecrumbled
Orange Poppy Seed Dressing
- 1/4cupolive oil
- 1/4cupcanolaor vegetable oil
- 2tsporange zest
- 1/4cupfresh orange juice
- 2tbspFresh Lemon Juice
- 2tbsphoney
- 2tspdijon mustard
- 1tbsppoppy seeds
- 1/4tspsalt
Instructions
For the dressing:

Add all of the dressing ingredients to a jar, cover with lid and shake to emulsify.

Chill for 30 minutes if possible. Shake again just before pouring over salad.
For the salad:

Layer spinach, apples, mandarin oranges, pears, pecans and feta into a large salad bowl.

Drizzle with dressing and toss to evenly coat. Serve immediately.
