How To Make Grilled Fish with New Potato, Red Pepper & Olive Salad

Ingredients
- 4 fillets of white fish (such as cod or tilapia)
- 1 lb new potatoes, halved
- 1 red pepper, sliced
- 1/2 cup green olives, pitted
- 2 tbsp olive oil
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions

Preheat the grill to medium-high heat.

Season the fish fillets with salt, pepper, and olive oil.

Place the fish on the grill and cook for about 4-5 minutes per side, or until cooked through and flaky. Remove from heat and set aside.

In a pot of boiling water, cook the new potatoes until tender, about 10 minutes. Drain and set aside.

In a large bowl, combine the cooked potatoes, sliced red pepper, and pitted olives.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the potato mixture and toss to combine.

Serve the grilled fish on top of the potato salad. Garnish with fresh parsley.
