How To Make Grilled Red Onion & Potato Salad

Ingredients
- 4 red onions
- 4 medium-sized potatoes
- 3 tablespoons of olive oil
- 2 tablespoons of balsamic vinegar
- Salt and pepper to taste
- A handful of fresh parsley, chopped
- 1 tablespoon of Dijon mustard
Instructions

Preheat the grill to medium heat.

Peel the onions and potatoes, then slice them into thin rounds.

In a large bowl, toss the onion and potato slices with olive oil, balsamic vinegar, salt, and pepper.

Grill the onion and potato slices until they are tender and lightly charred, about 10-15 minutes.

Remove from the grill and let them cool slightly.

In a small bowl, mix together the Dijon mustard and chopped parsley.

Transfer the grilled onion and potato slices to a serving dish and drizzle with the mustard and parsley dressing.
