How To Make Salt-Baked Lamb Shanks

Ingredients
- 4 lamb shanks
- 4 cups coarse salt
- 2 tablespoons black peppercorns
- 6 garlic cloves, minced
- 4 sprigs fresh rosemary
- 1 lemon, zested
- 2 tablespoons olive oil
Instructions

Preheat the oven to 350°F (175°C).

In a large bowl, combine the coarse salt, black peppercorns, minced garlic, lemon zest, and olive oil.

Place a layer of the salt mixture at the bottom of a baking dish.

Rinse the lamb shanks and pat them dry with paper towels. Place them on top of the salt mixture.

Cover the lamb shanks with the remaining salt mixture, making sure they are completely covered.

Bake in the preheated oven for 3 hours.

Remove the lamb shanks from the oven and let them rest for 10 minutes.

Using a spoon, carefully remove the salt crust from the lamb shanks.

Serve the lamb shanks hot, garnished with fresh rosemary sprigs.
