Serves:

Ingredients

  • 1 lb new potatoes, halved
  • 4 cups frisée lettuce, torn into bite-sized pieces
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp fresh dill, chopped
  • 2 tbsp olive oil
  • 1 tbsp white wine vinegar
  • Salt and pepper to taste

Instructions

  1. Place the new potatoes in a pot of salted boiling water and cook until tender, about 15-20 minutes. Drain and allow to cool slightly.

  2. In a large bowl, combine the frisée lettuce, red onion, cherry tomatoes, feta cheese, and fresh dill.

  3. Add the cooked new potatoes to the salad bowl.

  4. In a small bowl, whisk together the olive oil, white wine vinegar, salt, and pepper.

  5. Pour the dressing over the salad and toss to combine.

  6. Serve the New Potato & Frisée Salad immediately and enjoy!
