Ingredients

  • 500g new potatoes
  • 2 tbsp tamarind paste
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cumin powder
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped red onion

Instructions

  1. Boil the new potatoes in salted water until tender. Drain and let them cool.

  2. In a bowl, mix together tamarind paste, olive oil, salt, black pepper, and cumin powder.

  3. Cut the cooled new potatoes into bite-sized pieces and place them in a serving bowl.

  4. Pour the tamarind dressing over the potatoes and toss to coat evenly.

  5. Add chopped cilantro and red onion to the salad and mix well.

  6. Serve the New Potato & Tamarind Salad chilled or at room temperature.
