  • 4 large russet potatoes, sliced into rounds
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh parsley
  • 2 tbsp apple cider vinegar
  • 1 tbsp dijon mustard

Instructions

  1. Preheat grill to medium heat.

  2. In a large bowl, toss potato rounds with olive oil, salt, and black pepper.

  3. Grill potato rounds for 10-12 minutes per side, until tender and lightly charred.

  4. In a separate bowl, whisk together red onion, parsley, apple cider vinegar, and dijon mustard.

  5. Once potatoes are finished grilling, add them to the bowl with the dressing and toss until fully coated.
