Ingredients

  • 1 cup cooked couscous
  • 1 cup deli turkey, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, halved
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the cooked couscous, deli turkey, cherry tomatoes, cucumber, red onion, feta cheese, Kalamata olives, and fresh parsley.

  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

  3. Pour the dressing over the couscous mixture and toss until well coated.

  4. Serve chilled as a refreshing and nutritious salad.
