How To Make Chicken & Chickpea Salad with Curry Yogurt Dressing

Ingredients
- 2 chicken breasts, cooked and shredded
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- for the dressing:
- 1/2 cup Greek yogurt
- 1 tbsp curry powder
- 1 tbsp lemon juice
- 1 tbsp honey
- Salt and pepper to taste
Instructions

In a large bowl, combine the shredded chicken, chickpeas, cucumber, bell pepper, red onion, and cilantro.

In a separate small bowl, whisk together the Greek yogurt, curry powder, lemon juice, honey, salt, and pepper until well combined.

Pour the dressing over the salad and toss until everything is evenly coated.
