Serves:

Ingredients

  • 2 cans of chickpeas, drained and rinsed
  • 3 tablespoons of Greek yogurt
  • 1 tablespoon of mayonnaise
  • 1 tablespoon of curry powder
  • 1 tablespoon of mango chutney
  • 1/4 cup of chopped cilantro
  • Juice of 1/2 lemon
  • Salt and pepper to taste
  • 8 slices of bread
  • Lettuce leaves and tomato slices (optional, for serving)

Instructions

  1. In a large bowl, mash the chickpeas with a fork or potato masher until they are mostly mashed but still have some texture.

  2. Add the Greek yogurt, mayonnaise, curry powder, mango chutney, chopped cilantro, lemon juice, salt, and pepper to the bowl. Mix well until everything is combined.

  3. Taste and adjust the seasoning if needed.

  4. Spread the chickpea salad onto slices of bread.

  5. Top with lettuce leaves and tomato slices if desired.

  6. Cut the sandwiches into halves or quarters and serve.
