Ingredients

  • 4 fish fillets (such as cod or snapper)
  • 1/4 cup chopped mint leaves
  • 1 ripe mango, peeled and diced
  • 1/2 red onion, finely chopped
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Place the fish fillets on a baking sheet lined with parchment paper.

  3. Season the fish with salt and pepper.

  4. Bake in the preheated oven for 12-15 minutes, or until the fish is cooked through and flakes easily with a fork.

  5. Meanwhile, in a small bowl, combine the chopped mint, diced mango, red onion, lime juice, and olive oil. Season with salt and pepper to taste.

  6. Once the fish is done, remove it from the oven and let it cool for a few minutes.

  7. Serve the baked fish topped with the mint and mango relish.
