Ingredients
- 2 large aubergines, sliced lengthwise
- 2 red onions, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon sugar
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin powder
- Juice of 1 lemon
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

Preheat a grill or grill pan over medium-high heat.

Brush the aubergine slices with olive oil and season with salt and pepper.

Grill the aubergine slices for 3-4 minutes on each side, until charred and tender. Remove from heat and set aside.

In a large skillet, heat the remaining olive oil over medium heat.

Add the onions, sugar, smoked paprika, and cumin powder to the skillet. Cook for 10-12 minutes, stirring occasionally, until the onions are caramelized and golden brown.

Remove the skillet from heat and squeeze the lemon juice over the onions. Stir to combine.

Arrange the grilled aubergine slices on a serving platter. Top with the caramelized onions and garnish with fresh parsley.
