Ingredients

  • 1 lb. beef sirloin, sliced
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 4 cups arugula
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, sliced
  • 1/4 cup crumbled feta cheese
  • dressing:
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. Season the steak with salt and pepper. Heat olive oil in a pan over medium-high heat and cook the steak until browned and cooked to your desired level of doneness.

  2. In a large bowl, toss arugula, cherry tomatoes, and red onion together.

  3. To make the dressing, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper in a small bowl.

  4. Arrange the steak on top of the salad and sprinkle with feta cheese. Drizzle the dressing over the salad and serve.
