Ingredients

  • 1 lb flank steak, thinly sliced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 4 cups mixed greens
  • 1/2 red onion, sliced
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives
  • 1/4 cup crumbled feta cheese
  • dressing:
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 garlic clove, minced
  • 1/2 tsp dried oregano
  • Salt and black pepper to taste

Instructions

  1. Season the sliced beef with salt and black pepper.

  2. Heat olive oil in a skillet over medium-high heat. Add the beef and cook for 2-3 minutes on each side until browned and cooked to your liking.

  3. In a large bowl, mix together the mixed greens, red onion, cucumber, cherry tomatoes, Kalamata olives, and feta cheese.

  4. In a small bowl, whisk together the dressing ingredients.

  5. Add the cooked beef to the salad, drizzle with the dressing, and toss to combine. Serve immediately.
