This roasted potato trio combines red, purple, and sweet potatoes for a filling side dish! It’s made with just 5 simple ingredients.

  • ½lbred new potatoes,organic
  • ½lbpurple new potatoes,organic
  • 1largesweet potato,organic
  • 4tbspextra virgin olive oil
  • kosher salt and freshly ground black pepper,to taste


  1. Preheat the oven to 350 degrees F.

  2. Thinly slice the red and purple potatoes, about ¼-inch slices, and arrange in rows. Thinly slice the sweet potato and arrange it in a separate baking pan. Drizzle the potatoes with olive oil and sprinkle with salt and pepper.

  3. Place the pans in a preheated oven and bake for about 1 hour for red and purple potatoes and about 1 hour and 20 minutes for the sweet potatoes, or until crispy and browned,

  4. Gently toss the potatoes together before serving.
