How To Make Tasty Chinois Chicken Salad

For Vinaigrette:
- ⅓cupsoy sauce
- ½cuprice wine vinegar
- ⅓cupChinese mustard
- 1egg yolk
- 2tbsphoney
- 1tbspsesame paste
- 2tbsppickled ginger,chopped
- salt and pepper,to taste
- 1tbspchili oil
- ¾cuppeanut oil
For Salad:
- 1mediummango
- 5cupsNapa cabbage
- 2mediumcarrots
- 1headradicchio
- 4cupsmixed greens,or watercress
- 3lbschicken breast,cooked, skinless
- 2cupswonton chips,crisp fried
- 2tbspsesame seeds,toasted
Instructions
Vinaigrette:

In a blender, mix soy sauce, rice wine, Chinese mustard, egg yolk, honey, sesame paste, chopped ginger, salt and pepper, and chili oil. Blend thoroughly. Slowly add peanut oil. Taste for seasoning.
Salad:

In a large salad bowl, mix all the salad ingredients. Add ½ the vinaigrette and taste. Proceed, adding more dressing a little at a time, so that salad is not overdressed.

Divide salad among 6 plates and sprinkle with fried wonton chips and sesame seeds.
