Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 1/2 tsp salt
  • 2 eggs
  • 1 cup honey
  • 1/2 cup vegetable oil
  • 1 cup strong brewed coffee
  • 1/2 cup orange juice
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan.

  2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves, and salt.

  3. In a separate bowl, beat eggs. Add honey, vegetable oil, coffee, orange juice, and vanilla extract. Mix well.

  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

  5. Pour batter into the prepared loaf pan and smooth the top.

  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

  7. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
