How To Make Lemon Roasted Spring Chicken with Asparagus

Ingredients

  • 4 chicken breasts
  • 2 lemons, sliced
  • 1 bunch of asparagus
  • 2 tbsp olive oil
  • 2 cloves of garlic, minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried thyme

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

  2. Place the chicken breasts on the prepared baking sheet and season with salt, black pepper, and dried thyme.

  3. Drizzle the olive oil over the chicken breasts and rub to coat evenly.

  4. Arrange the lemon slices on top of the chicken breasts.

  5. In a separate bowl, toss the asparagus with minced garlic, olive oil, salt, and black pepper.

  6. Spread the asparagus around the chicken on the baking sheet.

  7. Place the baking sheet in the preheated oven and roast for 25-30 minutes, or until the chicken is cooked through and the asparagus is tender.

  8. Remove from the oven and let the chicken rest for a few minutes before serving.
