Ingredients

  • 500g prawns, deveined and cleaned
  • 2 potatoes, peeled and cubed
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 green chillies, slit lengthwise
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 cup coconut milk
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan and add the chopped onion. Cook until translucent.

  2. Add the minced garlic, grated ginger, and green chillies. Cook for a minute.

  3. Add the turmeric powder, red chilli powder, cumin powder, and coriander powder. Stir well.

  4. Add the prawns and potatoes to the pan. Season with salt. Cook for 5 minutes.

  5. Pour in the coconut milk and simmer for 15-20 minutes, until the prawns and potatoes are cooked through and the curry thickens.

  6. Garnish with fresh coriander leaves before serving.

  7. Serve hot with steamed rice or crusty bread.
