Ingredients

  • 4 boneless, skinless chicken breasts
  • Juice of 2 lemons
  • Zest of 1 lemon
  • 2 tablespoons olive oil
  • 4 cloves of garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces of soba noodles
  • 1 cup snap peas, thinly sliced
  • 1 cup asparagus, cut into small pieces
  • 1 cup carrots, julienned
  • 2 green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • Sesame seeds, for garnish
  • Fresh cilantro, for garnish

Instructions

  1. In a bowl, combine the lemon juice, lemon zest, olive oil, minced garlic, oregano, salt, and black pepper. Place the chicken breasts in a shallow dish and pour the marinade over them. Let the chicken marinate for at least 10 minutes.

  2. Heat a grill or grill pan over medium-high heat. Cook the chicken breasts for about 6-8 minutes on each side, or until cooked through. Remove from heat and let them rest for a few minutes before slicing.

  3. Cook the soba noodles according to package instructions. Drain and set aside.

  4. In a large skillet, heat some olive oil over medium heat. Add the snap peas, asparagus, carrots, and green onions. Stir-fry for about 3-4 minutes, until the vegetables are slightly tender.

  5. In a small bowl, whisk together the soy sauce, sesame oil, and honey. Pour the sauce over the vegetables in the skillet and stir to coat.

  6. Add the cooked soba noodles to the skillet and toss everything together until well combined.

  7. Serve the lemon chicken slices on top of the spring veg noodles. Sprinkle with sesame seeds and fresh cilantro for garnish.
