How To Make Lemony Mushroom Pilaf

Ingredients
- 1 cup basmati rice
- 2 cups vegetable broth
- 1 tbsp olive oil
- 1 onion, diced
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 1 lemon, zest and juice
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions

Rinse the basmati rice under cold water until the water runs clear. Set aside.

In a large saucepan, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.

Add the sliced mushrooms and minced garlic to the saucepan. Cook until the mushrooms have released their liquid and are slightly browned, about 8 minutes.

Add the rinsed basmati rice to the saucepan and stir to combine with the mushrooms and onions. Cook for 2 minutes.

Pour in the vegetable broth, lemon zest, and lemon juice. Bring to a boil, then reduce heat to low and cover the saucepan. Simmer for 15 minutes, or until the rice is cooked and all the liquid has been absorbed.

Remove from heat and let the pilaf sit, covered, for 5 minutes. Fluff the rice with a fork.

Stir in the chopped parsley and season with salt and pepper to taste.
