How To Make Lemony Mushroom & Herb Rice

Ingredients
- 2 cups of white rice
- 4 cups of vegetable broth
- 1 lemon (zest and juice)
- 2 tablespoons of olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 8 ounces of mushrooms, sliced
- 1 tablespoon of fresh thyme leaves
- 1 tablespoon of fresh parsley, chopped
- Salt and pepper to taste
Instructions

In a medium-sized pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until fragrant.

Stir in the sliced mushrooms and cook until they release their moisture and become tender.

Add the white rice, vegetable broth, lemon zest, and lemon juice to the pot. Season with salt and pepper.

Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.

Once the rice is cooked, fluff it with a fork and stir in the fresh thyme leaves and chopped parsley.

Taste and adjust the seasoning if needed.
