How To Make Arroz Congri (Cuban Rice and Black Beans)
Arroz congri is a Cuban dish of rice and black beans, giving it a distinctly dark hue. The vegan dish also has bell peppers, onions, bay leaf, and garlic.

Ingredients
- 2tspolive oil
- ½cupgreen bell pepper,chopped
- ½cupred bell pepper,chopped
- 1small onion,chopped
- 2clovesgarlic,minced
- 1cuplong grain rice,uncooked
- 15ozblack beans,(1 can), don’t drain
- 1½cupswater
- ½tspcumin
- 1bay leaf
- pinchoregano
- salt and pepper,to taste
Instructions

In a heavy medium-sized pot, heat oil on medium heat.

Add onions, peppers and garlic and saute for about 4 to 5 minutes, until soft.

Add rice, beans, water, cumin, bay leaf, oregano and salt and pepper. Simmer on medium-low heat, stirring occasionally, until the rice absorbs most of the water and just barely skims the top of the rice.

Cover, reduce heat to low, and for simmer 20 minutes.

After 20 minutes, shut the flame off and let it sit, covered for another 5 minutes (don’t open the lid).
