How To Make Sprout & Chorizo Carbonara

Ingredients

  • 8 oz spaghetti
  • 4 oz chorizo, sliced
  • 1 lb Brussels sprouts, trimmed and halved
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.

  2. In a large skillet, cook the sliced chorizo over medium heat until crispy. Remove from the skillet and set aside.

  3. In the same skillet, add the Brussels sprouts and garlic. Cook until the sprouts are tender and slightly browned, about 10 minutes.

  4. In a bowl, whisk together the beaten eggs and grated Parmesan cheese.

  5. Add the cooked spaghetti to the skillet with the Brussels sprouts. Pour the egg and Parmesan mixture over the spaghetti. Toss to coat the pasta evenly.

  6. Cook for an additional 2-3 minutes, stirring constantly, until the eggs are cooked and the sauce has thickened.

  7. Season with salt and pepper to taste.

  8. Serve the carbonara topped with the crispy chorizo and fresh parsley.
