How To Make Chorizo & Purple Sprouting Broccoli Carbonara

Ingredients
- 8 oz spaghetti
- 4 oz chorizo, sliced
- 1 bunch purple sprouting broccoli, cut into florets
- 2 cloves garlic, minced
- 2 eggs
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

Cook the spaghetti according to package instructions. Drain and set aside.

In a large skillet, cook the chorizo over medium heat until crispy. Remove from the skillet and set aside.

Add the broccoli and garlic to the skillet and cook until the broccoli is tender.

In a bowl, whisk together the eggs and Parmesan cheese. Season with salt and pepper.

Add the cooked spaghetti to the skillet with the broccoli and garlic. Pour the egg mixture over the top and toss everything together until the spaghetti is coated.

Cook for another 2-3 minutes, stirring constantly, until the eggs are cooked and the sauce has thickened.

Serve the carbonara topped with the cooked chorizo and garnished with fresh parsley.
