Ingredients

  • 8 oz spaghetti
  • 2 chicken breasts, diced
  • 4 slices bacon, cooked and crumbled
  • 3 garlic cloves, minced
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • Salt and pepper, to taste
  • Chopped parsley, for garnish

Instructions

  1. Cook spaghetti according to package instructions. Drain and set aside.

  2. In a large skillet, cook the diced chicken until browned and cooked through. Remove from skillet and set aside.

  3. In the same skillet, cook the minced garlic over medium heat until fragrant.

  4. In a bowl, whisk together the eggs, Parmesan cheese, and heavy cream.

  5. Add the cooked spaghetti, chicken, bacon, and egg mixture to the skillet with the garlic. Toss everything together well until the pasta is coated and the sauce thickens slightly.

  6. Season with salt and pepper to taste.

  7. Serve the loaded chicken carbonara topped with chopped parsley.
