
How To Make Breakfast Potatoes
You only need three ingredients to yield crispy on the outside, and soft on the inside seasoned breakfast potatoes to complete your breakfast plate!

Ingredients
- 5russet potatoes,(1½ lbs)
- ¼cupolive oil
- 2tspherb seasoning,to taste
For Herb Seasoning:
- 1tbspsalt
- 1½tspfreshly ground black pepper
- 2tsponion powder
- 2tspgarlic powder
- 1tspdried parsley
- ¼tspdried oregano
- ⅛tspdried basil
- ⅛tspdried thyme
Instructions

Preheat the oven to 400 degrees F. Meanwhile rinse and scrub the potatoes, then pierce each potato several times with a fork.

Bake the potatoes in the preheated oven for 35 minutes.

Remove from oven, then allow to cool for 30 minutes or chill overnight when making ahead.

Dice the chilled potatoes into ½-inch cubes.

Pour the olive oil into a large non-stick skillet and heat over medium heat. Once hot, carefully pour diced potatoes into hot oil. Immediately sprinkle with Herb Seasoning, then toss the potatoes with a heat proof spatula.

Cover pan with lid and cook potatoes, stirring every few minutes as they begin to lightly brown on bottom, for about 8 to 12 minutes until the potatoes have reached desired tenderness.
