Ingredients

  • 1 ½ cups of all-purpose flour
  • ½ cup of unsalted butter, cold and cubed
  • ¼ cup of granulated sugar
  • 2 lemons, juiced and zested
  • 4 eggs
  • 1 cup of granulated sugar
  • 1 teaspoon of cornstarch
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a food processor, combine the flour, cold butter, and granulated sugar. Pulse until the mixture resembles coarse crumbs.

  3. Press the crust mixture into a tart pan, making sure to evenly distribute it on the bottom and sides.

  4. Bake the crust for 15 minutes or until lightly golden brown. Set aside to cool.

  5. In a mixing bowl, whisk together the lemon juice, lemon zest, eggs, granulated sugar, and cornstarch until well combined.

  6. Pour the lemon mixture into the cooled tart crust.

  7. Bake for 25-30 minutes or until the filling is set and lightly browned on top.

  8. Allow the tart to cool completely before serving.

  9. Dust with powdered sugar before serving.
