Ingredients
- 1 ½ cups of all-purpose flour
- ½ cup of unsalted butter, cold and cubed
- ¼ cup of granulated sugar
- 2 lemons, juiced and zested
- 4 eggs
- 1 cup of granulated sugar
- 1 teaspoon of cornstarch
- Powdered sugar, for dusting
Instructions

Preheat the oven to 350°F (175°C).

In a food processor, combine the flour, cold butter, and granulated sugar. Pulse until the mixture resembles coarse crumbs.

Press the crust mixture into a tart pan, making sure to evenly distribute it on the bottom and sides.

Bake the crust for 15 minutes or until lightly golden brown. Set aside to cool.

In a mixing bowl, whisk together the lemon juice, lemon zest, eggs, granulated sugar, and cornstarch until well combined.

Pour the lemon mixture into the cooled tart crust.

Bake for 25-30 minutes or until the filling is set and lightly browned on top.
