Ingredients

  • 1 lb ground breakfast sausage
  • 4 cups diced potatoes
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 8 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, cook the breakfast sausage over medium heat until browned and crumbled, about 10 minutes. Remove from pan and set aside.

  2. In the same skillet, add the diced potatoes and olive oil. Cook for 8-10 minutes, stirring occasionally, until potatoes are crispy and tender.

  3. Add the chopped onion, green and red bell peppers, garlic powder, salt, and pepper to the skillet with the potatoes. Cook for an additional 5 minutes, or until vegetables are tender.

  4. In a separate bowl, whisk together the eggs and milk until well combined.

  5. Add the cooked sausage back to the skillet with the potatoes and vegetables. Pour the egg mixture over the top of the sausage and vegetables. Stir everything together gently and cook until the eggs are set, about 5-7 minutes.

  6. Sprinkle the shredded cheese over the top of the egg mixture and cover the skillet with a lid until the cheese is melted and bubbly, about 2-3 minutes.

  7. Garnish with fresh parsley and serve hot.
