Ingredients

  • 8 oz pancit noodles
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 onion, sliced
  • 1 carrot, julienned
  • 1 bell pepper, sliced
  • 1 cup cabbage, shredded
  • 1 cup green beans, sliced
  • 1 cup chicken breast, cooked and shredded
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon fish sauce
  • Salt and pepper, to taste
  • Green onions, for garnish
  • Calamansi or lemon wedges, for serving

Instructions

  1. Cook the pancit noodles according to package instructions. Drain and set aside.

  2. In a large pan or wok, heat the vegetable oil over medium heat. Add the garlic and onion, and sauté until fragrant and translucent.

  3. Add the carrots, bell pepper, cabbage, and green beans to the pan. Cook until the vegetables are tender.

  4. Push the vegetables to one side of the pan and add the shredded chicken to the other side. Heat until warmed through.

  5. Add the cooked pancit noodles to the pan and mix well with the vegetables and chicken.

  6. In a small bowl, combine the soy sauce, oyster sauce, fish sauce, salt, and pepper. Pour the sauce over the noodle mixture and stir to evenly coat everything.

  7. Continue cooking for a few more minutes until everything is heated through.

  8. Serve the pancit hot, garnished with green onions. Serve with calamansi or lemon wedges on the side.
