How To Make Lainy’s Pancit Recipe

A classic Filipino noodle dish loaded with vegetables, meat, and savory flavors.

Ingredients

  • 8 oz Pancit bihon noodles
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 lb boneless chicken breast, sliced
  • 1 lb shrimp, peeled and deveined
  • 2 cups cabbage, chopped
  • 1 cup carrots, sliced
  • 1 cup green beans, trimmed
  • 3 cups chicken broth
  • 1/3 cup soy sauce
  • 1 tsp black pepper
  • 4 calamansi, juiced (or 1 lime)
  • green onions, chopped for garnish

Instructions

  1. Soak noodles in water for 15 minutes, then drain and set aside.

  2. Heat oil in a large wok or pan over medium heat. Sauté onions and garlic until fragrant.

  3. Add chicken and cook for 5 minutes. Add shrimp and cook for an additional 2-3 minutes or until pink.

  4. Add cabbage, carrots, and green beans. Stir fry for 2-3 minutes until vegetables are crisp-tender.

  5. Add chicken broth, soy sauce, and black pepper. Bring to a boil.

  6. Add noodles and cook for 5-7 minutes or until all the liquid is absorbed.

  7. Squeeze calamansi or lime juice over the pancit and toss to combine. Garnish with green onions before serving.
