  • 4 oz mozzarella cheese, grated
  • cup all-purpose flour
  • cup water
  • 2 tbsp unsalted butter
  • 1 tsp salt
  • ¼ tsp ground black pepper
  • ¼ tsp cayenne pepper
  • 1 egg, large
  • 5 cups vegetable oil, (up to 8 cups), for frying

For Serving:

  • ¼ cup marinara sauce


  1. Add water, butter, and salt into a skillet over medium heat and bring to a boil.
  2. Once the water has boiled and butter has melted, add the flour, then reduce heat to medium. Mix for roughly 3 to 5 minutes until the dough comes together.
  3. Transfer to a mixing bowl and allow to rest for roughly 10 minutes until warm to the touch.
  4. Add both peppers and egg. Whisk until the mixture turns into a sticky dough.
  5. Cover with cling film and set aside for at least an hour to rest in a chilled area.
  6. While waiting, preheat the oil ready for frying. Prepare also a plate lined with paper towels.
  7. Once the dough has rested, add the mozzarella cheese and mix to combine.
  8. Form into roughly 2-ounce portions using either 2 spoons an ice cream scoop, or greased hands.
  9. Deep fry in batches for roughly 3 to 5 minutes until golden brown and tiny pieces of mozzarella cheese poking up the surface.
  10. Drain onto a basket or plate lined with paper towels. Serve while still hot with marinara sauce per serving.
