Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 oz goat’s cheese
  • 1 cup dried lentils
  • 2 cups chicken broth
  • 2 cups diced beets
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Season the chicken breasts with salt, pepper, and dried thyme. Place them in a baking dish and crumble the goat’s cheese over the top.

  3. In a separate pot, bring the chicken broth to a boil. Add the lentils and cook for 20-25 minutes, or until tender.

  4. In a large skillet, heat the olive oil over medium heat. Add the diced beets and sauté for 5-7 minutes, until they start to soften.

  5. Transfer the chicken breasts to the preheated oven and bake for 20-25 minutes, or until cooked through.

  6. Drain the lentils and add them to the skillet with the beets. Season with salt and pepper to taste and cook for an additional 2-3 minutes.

  7. Serve the warm lentils and beets alongside the goat’s cheese topped chicken breasts.
