How To Make Curried Swede Soup Recipe

Ingredients
- 1 medium-sized swede, peeled and diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 tablespoon of curry powder
- 4 cups of vegetable broth
- 1 cup of coconut milk
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions

In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic, sauté until fragrant.

Add the diced swede and curry powder. Stir well to coat the swede in the curry powder.

Pour in the vegetable broth and bring to a boil. Reduce heat and let simmer for about 20 minutes, or until the swede is tender.

Use an immersion blender or transfer the soup to a blender to puree until smooth.

Return the soup to the pot and stir in the coconut milk. Season with salt and pepper to taste.

Cook for another 5 minutes to heat through.

Serve hot, garnished with fresh cilantro.
