- 400g boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tbsp Thai green curry paste
- 1 can (400ml) light coconut milk
- 1 cup mixed vegetables (such as bell peppers, broccoli, and carrots)
- 1 tbsp fish sauce
- 1 tsp sugar
- 1 tbsp vegetable oil
- 1/4 cup fresh basil leaves
Instructions

Heat vegetable oil in a large pan over medium heat. Add the Thai green curry paste and cook for 2 minutes until fragrant.

Add the chicken pieces and stir-fry for 5 minutes until they are almost cooked through.

Pour in the coconut milk and bring to a simmer. Cook for 10 minutes, until the chicken is cooked through and the flavors have melded together.

Add the mixed vegetables, fish sauce, and sugar. Cook for another 5 minutes until the vegetables are tender.

Stir in the fresh basil leaves and cook for an additional 2 minutes.
