How To Make Jamaican Brown Stew Chicken Recipe

Ingredients
- 2 lbs chicken pieces (legs and/or thighs)
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, sliced
- 2 carrots, peeled and sliced
- 2 potatoes, peeled and cubed
- 2 tomatoes, chopped
- 2 sprigs thyme
- 2 tbsp soy sauce
- 1 tbsp Worcestershire sauce
- 1 tbsp brown sugar
- 1 tbsp vegetable oil
- 2 cups chicken broth
- Salt and pepper to taste
Instructions

Season chicken pieces with salt and pepper.

Heat vegetable oil in a large pot over medium heat. Brown chicken pieces on all sides. Remove chicken and set aside.

In the same pot, sauté onions, garlic, and bell peppers until softened.

Stir in tomatoes, carrots, potatoes, thyme, soy sauce, Worcestershire sauce, and brown sugar.

Return chicken to the pot and pour in chicken broth. Bring to a boil, then reduce heat to low. Cover and simmer for 30-40 minutes, or until chicken is cooked through and tender.
