Ingredients

  • 2 lbs chicken pieces
  • 2 tbsp vegetable oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 cup chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tsp thyme
  • 1 tsp allspice
  • 1 tsp paprika
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (180°C).

  2. Heat the vegetable oil in a large oven-safe pot or Dutch oven over medium heat.

  3. Add the chicken pieces and brown them on all sides. Remove and set aside.

  4. In the same pot, add the onion, garlic, and bell peppers. Sauté until softened.

  5. Add the carrots, potatoes, chicken broth, soy sauce, brown sugar, thyme, allspice, paprika, Worcestershire sauce, salt, and pepper. Stir well to combine.

  6. Return the chicken to the pot and stir to coat it with the sauce.

  7. Cover the pot with a lid or aluminum foil and transfer it to the preheated oven.

  8. Bake for about 1 hour, or until the chicken is tender and cooked through.

  9. Serve the Jamaican Brown Stew Chicken hot over rice or with your favorite side dishes.
