How To Make Wild Rice Casserole

Ingredients
- 1 cup wild rice
- 2 ½ cups vegetable broth
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 carrots, diced
- 1 zucchini, diced
- 1 cup mushrooms, sliced
- 1 tsp dried thyme
- 1 tsp dried sage
- 1 tsp salt
- ½ tsp black pepper
- ½ cup grated Parmesan cheese
- ½ cup chopped fresh parsley
Instructions

Preheat the oven to 375°F (190°C).

In a medium saucepan, bring the vegetable broth to a boil. Add the wild rice, cover, and simmer for 45 minutes, or until the rice is tender.

In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté for 2-3 minutes, until they start to soften.

Add the bell pepper, carrots, zucchini, and mushrooms to the skillet. Cook for 5-7 minutes, until the vegetables are tender.

Stir in the dried thyme, dried sage, salt, and black pepper.

In a large mixing bowl, combine the cooked wild rice, sautéed vegetables, Parmesan cheese, and chopped parsley. Mix well.

Transfer the mixture to a greased casserole dish.

Bake for 25-30 minutes, until the casserole is heated through and the top is golden brown.
