How To Make Wild Rice Casserole

Ingredients

  • 1 cup wild rice
  • 2 ½ cups vegetable broth
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 carrots, diced
  • 1 zucchini, diced
  • 1 cup mushrooms, sliced
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ cup grated Parmesan cheese
  • ½ cup chopped fresh parsley

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a medium saucepan, bring the vegetable broth to a boil. Add the wild rice, cover, and simmer for 45 minutes, or until the rice is tender.

  3. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté for 2-3 minutes, until they start to soften.

  4. Add the bell pepper, carrots, zucchini, and mushrooms to the skillet. Cook for 5-7 minutes, until the vegetables are tender.

  5. Stir in the dried thyme, dried sage, salt, and black pepper.

  6. In a large mixing bowl, combine the cooked wild rice, sautéed vegetables, Parmesan cheese, and chopped parsley. Mix well.

  7. Transfer the mixture to a greased casserole dish.

  8. Bake for 25-30 minutes, until the casserole is heated through and the top is golden brown.

  9. Serve hot and enjoy!
