How To Make Pearl Barley, Bacon & Leek Casserole

Ingredients

  • 1 cup pearl barley
  • 6 slices bacon, chopped
  • 2 leeks, sliced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a large oven-safe skillet, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the skillet.

  3. Add the leeks and garlic to the skillet and cook until softened, about 5 minutes.

  4. Add the pearl barley, chicken or vegetable broth, dried thyme, salt, and pepper to the skillet. Stir to combine.

  5. Bring the mixture to a simmer, then cover the skillet with a lid or foil and transfer to the preheated oven.

  6. Bake for 1 hour or until the pearl barley is tender and most of the liquid has been absorbed.

  7. Remove from the oven and stir in the crispy bacon.

  8. Garnish with fresh parsley and serve hot.
