Ingredients

  • 1 cup pearl barley
  • 4 carrots, peeled and sliced into rounds
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1/4 cup fresh dill, chopped
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp honey

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Cook the pearl barley according to package instructions. Drain and set aside.

  3. Place the sliced carrots on a baking sheet. Drizzle with olive oil, salt, and pepper. Toss to coat evenly.

  4. Roast the carrots in the preheated oven for 25-30 minutes, or until tender and slightly caramelized.

  5. In a small bowl, whisk together the dill, apple cider vinegar, Dijon mustard, honey, salt, and pepper.

  6. In a large serving bowl, combine the cooked pearl barley, roasted carrots, and dill vinaigrette. Toss gently to coat.

  7. Serve the warm pearl barley and roasted carrot salad immediately.
