How To Make Warm Pearl Barley & Roasted Carrot Salad with Dill Vinaigrette

Ingredients
- 1 cup pearl barley
- 4 carrots, peeled and sliced into rounds
- 2 tbsp olive oil
- Salt and pepper to taste
- 1/4 cup fresh dill, chopped
- 2 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 1 tbsp honey
Instructions

Preheat the oven to 400°F (200°C).

Cook the pearl barley according to package instructions. Drain and set aside.

Place the sliced carrots on a baking sheet. Drizzle with olive oil, salt, and pepper. Toss to coat evenly.

Roast the carrots in the preheated oven for 25-30 minutes, or until tender and slightly caramelized.

In a small bowl, whisk together the dill, apple cider vinegar, Dijon mustard, honey, salt, and pepper.

In a large serving bowl, combine the cooked pearl barley, roasted carrots, and dill vinaigrette. Toss gently to coat.
