- 2 large onions, thinly sliced
- 2 tbsp butter
- 2 cloves of garlic, minced
- 1 cup pearl barley
- 4 cups vegetable broth
- 1 tsp thyme
- Salt and pepper to taste
- 1 cup shredded cheese
- 4 slices of crusty bread

In a large pot, melt the butter over medium heat. Add the onions and cook until caramelised, about 20 minutes.

Add the garlic and cook for another minute.

Stir in the pearl barley, vegetable broth, and thyme. Bring to a boil, then reduce heat and simmer for 25 minutes or until the barley is tender.

Meanwhile, preheat the oven to 400°F (200°C). Place the bread slices on a baking sheet and top with the shredded cheese. Bake for 5-7 minutes or until the cheese is melted and bubbly.
