  • 1 lb turkey breast, cooked and shredded
  • 1 cup pearl barley
  • 4 cups turkey or chicken broth
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves of garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the diced onion, carrots, and celery. Cook for 5 minutes until vegetables start to soften.

  2. Add the minced garlic, dried thyme, and dried rosemary to the pot. Cook for another 2 minutes until fragrant.

  3. Pour in the turkey or chicken broth and bring to a boil. Add the pearl barley and reduce heat to a simmer. Cook for 45 minutes until barley is tender.

  4. Add the shredded turkey to the pot and season with salt and pepper to taste. Cook for an additional 5 minutes until turkey is heated through.

  5. Serve the hearty barley turkey soup hot, garnished with freshly chopped parsley.
