
How To Make Asparagus Casserole
This Swiss asparagus casserole levels up the fresh taste of the vegetable with sour cream and Swiss cheese for a tender and creamy bite.

Ingredients
- 6tsbpbutter,divided use
- 2cupsfresh asparagus,cut diagonally into 1½-inch slices
- ¾cuponion,sliced
- 1tbspflour
- salt and pepper,to taste
- 1cupsour cream
- 1cupSwiss cheese
- ¼cuppank crubs,or cracker crumbs
Instructions

Preheat oven to 400 degrees F.

In a large saucepan over medium-high heat melt 2 tablespoons of butter in a large skillet. Saute asparagus for 2 to 3 minutes until barely tender. Remove from pan and set aside.

In the same skillet, saute onion in 2 tablespoons of butter until onion is soft and translucent. Stir in flour, salt, and pepper. Cook for 1 minute until flour is well blended.

Add sour cream and cheese to the sauce.

Cook, stirring constantly, over low heat until cheese melts.

Spoon asparagus into a buttered shallow baking dish. Top with cheese, onion, and sour cream mixture. In a small skillet heat the remaining butter, and when it has melted toast the Panko crumbs for about 1 minute.

Bake at 400 degrees F for 20 minutes. If the top is not brown, place it under the broiler for 1 to 2 minutes.
